This year our salads are "Carbon Neutral." Our students have grown over 20 varieties of unique greens with the help of the Specialty Crops Program at CSU.

Cobb Salad

Romaine lettuce, applewood smoked bacon, hand battered crisp chicken, avocado, tomatoes, egg, blue cheese, and served traditionally with French dressing, $8.95

Sandwiches

All sandwiches and burgers are served with your choice of soup, salad or fries.

BLT

Thick sliced, applewood smoked bacon, field greens, tomato slices, with mayonnaise, $8.25

Chicken Salad Sandwich

Grilled, diced chicken breast, seedless grapes, almonds, blended with mayonnaise, served on light fruit bread, $8.25

Pulled Pork Sandwich

Long Family Farms slow roasted pork with slaw and "My Daddy's" BBQ sauce, $8.50

Hamburger

Charolais ground beef from Colorado’s Best Beef. Served on a Schmidt's Bakery bun with your choice of Swiss, cheddar, or Blue cheese crumbles, $8.25

Ramburger

Hi Ho Sheep Farm ground lamb, seasoned with garlic, mint, parsley and served with your choice of Swiss, cheddar, or Blue cheese crumbles, $8.75

Fish Tacos

Crispy fish with salsa, shredded cabbage, and pico de gallo, in fresh, locally made tortillas, $8.50

Seasonally, we will be serving special menu items featuring locally raised products.

Desserts

Ask your server about our rotating selection of handcrafted ice creams and sorbets prepared by Chef Jeff Miller of the CSU Restaurant and Resort Management Program. Accompanied by Smoked Bacon Peanut Brittle, $3.95

Beverages

We serve Colorado roasted Café Richesse coffees, West Slope wines, Fort Collins beers, including our exclusive Rambunctious Ale by Coopersmith's. Each semester we will also serve Jack Aven’s brewing class specialties, when available.

The Foodlinks Story

The Aspen Grille was founded with sustainability as one of its goals and is committed to using local food products whenever possible. Hi Ho Sheep Farm in Windsor supplies our lamb; John Long and family produce our pork. Our Charlois beef is raised by two generations of CSU graduates. New this year, we are raising our own greens in collaboration with Horticulture right here on campus. Please ask your server about the specialty leafy greens project.
