This year the Aspen Grille is "greener than ever." With the help of Specialty Crops, we have a greenhouse where we are growing over 20 varieties of lettuce for use as our "Carbon Neutral Salads." We bike the greens to the Grille, so we use no fossil fuel in the production. And, they are great salads!
We are also very proud to announce that the Grille has been certified by the Green Restaurant Association as a "green restaurant." We have completed steps to acheive this certification, with many more to come. Eco-friendly menu paper, energy efficient grills, biodegradable cleaning products, and low flow faucet aerators. We are now one of only two restaurants in Colorado to be designated as a "green restaurant."
The Aspen Grille is a student-run restaurant located in the University Club, on the upper level of the Student Center. The Aspen Grille is open to the public Tuesday through Friday during the academic year.
The Aspen Grille will, whenever possible, use local food products. For example, Hi Ho Sheep Farm in Windsor supplies our lamb and Hazel Dell Mushroom Farm grows our mushrooms south of Fort Collins. Our beef is raised by two generations of CSU graduates and ground to our specifications. Long Family Farms in Eaton raises free-range pigs for bacon and pork products. In season, the greens, vegetables and herbs are grown in our garden here on campus with the help of the Specialty Crops Program. Local bakers produce craft breads and Cafe Richesse, owned by a Colorado State University Alumnus, roasts "socially conscious" coffee.
